It is our mission to make people happy by serving great tasting and natural gelato (ice cream). With our gelato we  want to introduce “slow food” as well as bring the joy of “la dolce vita” to Hawaii.

True Artisanship

We are dedicated to the true artisan handcrafted gelato the way it is done by the finest gelato masters in Italy. We are using our own recipes, original Italian gelato equipment and authentic traditional Italian processes.

Our artisan gelato is made in a certified and environmentally friendly production, using environmentally save products wherever possible and minimizing energy consumption.

 

Our process is key to our success and includes the following elements:

  • Selecting the very best ingredients
  • Working from scratch – making our own mixes, pastes, toppings and garnishes
  • Extracting the flavors through cold and hot fusion processes
  • Freezing fresh daily
  • Storage in “high tech”, specifically designed Italian gelato freezers.

What is Artisan Gelato?

Chocolate

Artisan gelato is a type of ice cream, which is per definition handmade by a ‘skilled craftsperson’ using skills passed on through generations and perfected over decades. Artisan producers use a ‘hands on’ approach as they make smaller batches of gelato intended for immediate consumption as the best gelato is eaten fresh directly after completion of the freezing process. Artisan gelato making is using a manual process. It requires a ‘human touch’ while preparing and combining ingredients or keeping a close eye on the freezing process.

 

What is the Difference between Gelato and Sorbetto?

 

  • Gelato is the Italian word for ice cream. Gelato has 50 to 70% less butter fat than regular ice cream, which translates to less calories per serving, making it a perfect, more healthy treat to indulge in.
  • Sorbetto is the Italian word for fruit gelato without containing dairy. It has 0 % butter fat and does not contain any dairy products or lactose. It is very low in calories – approximately 80 to 90 kcal per ½ cup serving. Sorbettos are vegan, gluten free, and a healthy and delicious alternative for people with food intolerances or special diets.
  • Gelato incorporates less air than ice cream during the freezing process due to the low butterfat content and the lower speed at which the gelato is churned. You eat gelato, not air!
  • Gelato is denser and has a stronger flavor experience without using artificial flavoring or high fat content.

 

Our Ingredients:

To ensure that our end products are of maximum quality, we only use excellent raw materials for our production. We work solely with ingredients free of preservatives, artificial coloring and artificial flavors. We take great care when choosing our ingredients, working close with local farmers and suppliers.

If ingredients are not readily available on the islands, we source the very best from all around the world. Here are some examples from our imported ingredients:

  • Pistachios from Sicily, Italy
  • Dark chocolate and cocoa from France and Belgium
  • Hazelnuts from Piedmont, Italy
  • Walnuts from Sorrento, Italy
  • Pine Nuts from Pisa, Italy
